Well I don't think it's fair to lump all Christians into the nutso Creationist catagory. Much of my family is Christian, and I was a while back, yet I wouldn't say that any of them (other than my mad as a hatter Grandpa) are Creationists. Even when I was Christian myself there was a limit to how much bullshit I could swallow, and I drew the line at a 6000 year old earth.

But isn't the most basic definition of a Christian someone who believes that God is the creator of heaven and earth and mankind (and everything else)?  I guess I don't really understand how someone could consider themself a Christian without believing in creation.

Nope.  By that definition Jews would be Christians.  I'm pretty sure Christianity has something to do with that second half of the bible.

Why can't one believe God created all, and did it with 'natural' processes? I've never grasped why one idea should totally negate another. Fundies attribite natural processes today with acts of God (for example; A.I.D.S.); why couldn't it have been the same in the beginning? As a matter of fact, the "Great Flood" was a natural process.

That was my view for all the years I was a Christian. It's impossible take everything in the Bible literally (otherwise God is part vine and I'm supposed to literally eat his words, which enters Breatharianism and by that point you've lost what greasy leftovers of credibility you had left), and there's no reason to think that Genesis is any exception.

Of course, after a while I was doublethinking and said 'eh fuck it' and tossed the baby Jesus out with the bathwater.
