It's a toss up between Blazing Saddles and Young Frankenstein for me...

It's hard to pick a favourite, but if I had to, I'd say "Young Frankenstein".

Either Young Frankenstein or History of the World Part 1. But Blazing Saddles, The Producers, and Space Balls are also great.
