If I was going to make an animation (just a gif file; not a 'movie'), which would produce better results, or would it make any difference?

 A. Set the camera to snap multiple pics back-to-back of the subject in motion, and use these or,

 2) Take a video; then crop out a frame every so often, and use these.

I'd bet Demo's firstborn that there is a utility out there to convert an .avi to an animated .gif.  Therefore, shoot the video.

There is. You could download the trial edition of animation shop. There is even a function in there that will automaticlaly remove frames (like remove every second frame or what ever). You can repeat the process to "trim" your frames as amny times as you want, then you need to increase your frame rate to adjust the movie speed. (everytime you trim, you double the play speed). Then you can just resave as a gif file.
