Title: So Simple, So Delicious!
Post by: Min on September 02, 2006, 06:05:00 PM
Let's try a simple recipe thread.  The thread will be simple, as will the recipes within.

I'm going to ask that we stay on topic here.  Off-topic posts are subject to being moved or deleted.  I just don't want to have to sort through 5 pages of jibber jabber to find a recipe that I'm looking for.

My new favourite side is roasted potatoes.  I can't get enough!

Roasted Potatoes

4 medium red potatoes cut into small chunks
1 packet dry onion soup mix
2 tablespoons or so of olive oil

Put potato chunks in shallow baking pan.  Pour olive oil and soup mix over them and mix to coat.  Heat at 350 for 35 minutes.

Powdered Sugar Pancake Surpise

Whip up some pancake batter.  Add chocolate, butterscotch, white chocolate, mini m&ms, and peanut butter chips.  Cook on griddle.  Top with powdered sugar.  Yum!

A Simple Eggplant Appetizer

1 medium\large eggplant
1 jar of olive oil
1 block of your favourite cheese

Take eggplant and cut it up into about six to eight pieces lengthwise. Cut the pieces so that they are able to fold over on themselves easily. Don't make them too thick or they'll break when you try to fold them.

Get a sheet that can stand being placed in a broiler and line it with tin foil. (I used a cookie sheet for this and it worked)

Place the eggplant slices on the cookie sheet and lightly coat each side of every slice with olive oil.

Take the cheese and slice it up depending on how thick you want the cheese to be. (one medium sized slice or two thin slices per eggplant is what I do)

Place cheese slices on lowest part of eggplant and then fold the eggplant slice over itself so you've got this mini eggplant and cheese sandwhich thing going.

Stick it all in the broiler for about 2-3 minutes, flip them over, then broil for another minute or until cheese a total gooey mess. Let them cool, then eat up.

Anyone have any good top ramen recipes for the soon to be college guy?

I used to make it by using about a third of the seasoning packet, dumping out most of the cooking broth, and adding a little butter and soy sauce.
Title: Oven Baked Mapple Brie
Post by: TheJudge on September 11, 2006, 08:37:18 PM
Hey, we all like cheese here! Get yourself a round brie, put in in an oven safe plate, cover the top in brown sugar, add walnuts on top, pour maple syrup over the whole thing. Bake at 350 degrees for 10-12 minutes, depending on the size of the brie.

Serve on bread (sliced up baguette, and it has to be fresh!). So simple, yet so divine.

Pineapple bread puding.

1/4 cup margarine or butter
1 cup sugar
4 large eggs
1.5 tablespoons lemon juice
20 ounce can crushed pineapple, drained
5-6 slices of bread, cut into .5" cubes and left out until crouton like.

Grease a glass or ceramic 9" x 9" baking pan or 9" x 5" loaf pan. Do not use a metal pan because the bottom of the pudding will burn and, if it's not coated metal, the pineapple will pick up a metallic taste.

Unsalted margarine/butter makes the end result taste sweeter. Crushed pineapple packed in syrup rather than pineapple juice makes it taste extremely sweet.

Cream together the butter and sugar. Add the eggs one at a time, blending them in thoroughly. Mix in the lemon juice and pineapple and mix well. The result should look like lumpy scrambled eggs at the point.

Mix in the bread cubes. Don't worry if you see bits of butter floating around and separating. Let it sit for a minute or two, the stir it all up again to make sure everything is coated, then dump it all in the pan.

Bake 9" x 9" at 325F for 35-40 minutes until completely set.

Bake 9" x 5" at 325F for 40-50 minutes until completely set.

A coworker of my wife just gave us three big eggplants.  I may have to try this recipe out!  Thanks, Xolik.

Here's one we do all the time in the summer.

Fresh chives from garden, chopped + favourite brand of sour cream.

Stir.

Slather liberally on food of choice.

I went to make this, but I got stuck on step 2. I didn't know what to do. Can you please tell me what I have to do to cush the foosh mint?

Sorry it is crush not cush. oops.

Just crush the mint and mix it with the cola.

Notes:

Bwahaha!  Nice.  +1

Here's mine, from what I was sipping on last night:

Ingredients:

2 ounces of Maker's Mark (or any quality bourbon will do)
7 ounces egg nog

Pour bourbon into glass over ice.  Pour egg nog in over bourbon.  Stir thoroughly.  Drink while hurling obscenities at the television and the completely retarded election results.
Title: Fried Lemon Shrimp and Ramen with Veggies
Post by: SHOULTZ on January 16, 2007, 05:01:35 AM
      [Ingredients]
    * 2 packages of Shrimp or Chicken flavored Ramen
    * Shrimp [chicken or other white meat can be substituted]
    * 2 lemons
    * butter
    * Your favourite fresh vegetables, works well with
          > celery
          > tomatoes
          > red or green pepper

Make Ramen by following directions on package. While ramen cooks, begin to fry meat in a small amount of butter. After ramen finishes, strain all water out of noodles, add the noodles to the to meat in pan. Cut lemons and squeeze juice into the meat and noodles (the more the better!) Cut vegetables into small squares and toss into frying pan (you can pre-cut the veggies of course). Cover pan and let cook until the veggies are soft. Remember to keep the pan on a low temperature to avoid burning noodles. Also, remember to stir throughout the cooking process. Take noodle/meat/veggie mix out of pan and reapply remaining lemon juice to top. Serve with fresh bread and white wine (if appropriate)!

Ok, food this isn't, but delicious and simple it is!

Iced Coffee/Coffee Milkshake
Drop 1tsp of instant coffee, and as much sugar as you would usually take in a hot coffee into a glass.
Cover that with just enough boiling water to turn the mixture into a runny paste.
Top up with milk and stir.

This is where all my milk goes! =P

Take a jar of pepperocinos
Fill them with easy cheese
Wrap in a piece of bacon and grill them until the bacon is crispy
Serve as an appetizer.

These are awesomeness, pure, wholesome awesomeness.

If you are inclined, you can smoke these instead of grilling them.

Jew-food is the shiz. I kid you not. So, without further ado, I give you...

...my grandma's kugel recipe!

Ingredients:
- 1 lbs wide egg noodles such as these (http://www.bestdinnerrecipes.com/pictures/wideeggnoodles.JPG)
- 1 stick (8 Tbsp) butter (or equivalent in oil; works pretty well)
- 16 oz container sour cream*
- 1/4 to 1/2 cup sugar (depending on how sweet you want it; i prefer less)
- 4 eggs
- cinnamon to taste
- optional: peeled and diced apples, raisins, crushed or diced pineapple (however much you want)

* depending on how rich you like it, you can use a half-stick of butter and add 16 oz cottage cheese for a more traditional, rich version. I just don't like cottage cheese.

Preheat oven to 375F

1) cook the noodles, drain.

2) beat eggs, pour over noodles, mix.

3) add sour cream (and cottage cheese if using that), mix. If you wanted to add any fruit, add it in here as well.

4) melt butter, add to noodles along with cinnamon and sugar, mix.

5) put the noodle mixture into a pyrex (or other oven-safe dish).
    - completely optional, but if you do not want a crunchy noodle top, rub with oil, or placed crushed cornflakes on top

6) bake in oven for ~1 hr (check it occasionally, though).

This can be cut into pieces and kept in the freezer for at least a few months at minimum.

P.S. This thread makes me incredibly happy. Really. If anyone wants my complicated and/or crazy/inventive recipes, I'll glady share them! :D
